The disk itself is a huge mass, thousands of times that of the star.
The star could just orbit it.  In a sense, the star is just decoration
to provide light and warmth.

Your point about stability is well-founded though.  A star in the
middle of a disk is not dynamically stable (whether it bobs or not).
