Water will settle to a state where the surface is at the same
gravitational potential everywhere - "equal height", except that
height in this case is measured in both directions from the centre.

There's already a big hole in the middle easily big enough for a
*star* to pass through, but if you want the holes in there for plot
purposes anyway ... ;-)
