Back in college, I did a paper for Introduction to Medieval History on
what knights *really* were.  I concluded that they weren't nobles, but
rather that some nobles were also knights.  Knights - when you got
down to brass tacks - were professional soldiers for hire.  I
concluded with: "So if you want to find a knight these days, you can
start by checking the ads in the back of Soldier Of Fortune magazine."
